from the Celtic
Attic Cookbook
Zucchini
Fritter - Olde Scandinavian Recipe from Granny Pat Peterson
2
Cups Zucchini, coarse grated & drained on towel
2 - 3 tsp Sugar
1/2
tsp salt (we started using Celtic Sea Salt)
1
1/2 Cups shifted flour
1
1/2 tsp baking powder
1/2
cup can milk or cream
2
eggs beaten
1/4
cup grated Romano or Parmesan cheese
Add
your favorite Spaghetti sauce recipe or used canned sauce
Combine
sugar, salt, cream, eggs, cheese
Sift
flour & baking powder and combine with the wet ingredients. Fold in zucchini & spoon onto hot
greased griddle at once. Cook slowly
until browned. Top cakes with Spaghetti
sauce. Also great just like they are.
